Still playing around with the chicken/spinach theme tonight. This is basically the wilted spinach recipe stuffed in a chicken breast, along with some YUMMMMY goat cheese. I happen to think that just about anything is better with goat cheese. I also found some pretty good wine on sale when I went to buy the goat cheese today, so overall, a clear “win” tonight in a week of eating chicken for dinner every night.
